  1. Arrange 12 pear slices on an aluminum foil-lined baking sheet.
  2. Bake pear slices at 450° for 8 to 10 minutes or until golden crisp.
  3. Transfer to a paper towel-lined wire rack using a spatula.
  4. Cut pear crosswise into 12 thin rings.
  5. Arrange on a serving platter.
  6. Top evenly with crisp pancetta and crumbled goat cheese or Niagara Gold Cheese.

ICEWINE SALAD DRESSING

ICEWINE SALAD DRESSING We use the Icewine Dressing to add a luxurious complexity to your favourite salads. We use the dressing to marinate your chicken, black beans, corn and julienne vegetables and the topping of shredded cheese and fresh greens stays crisp on top until ready to serve. Mason Jars are great to use or Mayonnaise or peanut butter glass jars.

This make ahead salad lasts for a couple of days in a fridge and when you are ready to tip it out on a plate the greens are still crisp and fresh. Start with the heavier foods that you would like to marinate in the Icewine Salad Dressing on the bottom of the jar and work your way up through the lighter ingredients of salad greens. As long as your jar doesn't accidentally tip over in your bag, the delicate greens will be well-protected from the dressing until you're ready to eat. We take this Salad in a Jar for outdoor lunches and it is so impressive!

Icewine Salad Dressing starts with fresh olive oil. rice vinegar and Northern Ice Vidal Icewine. We like to add fresh herbs of basil, mint or dill grated lemon or orange rind and Montreal Steak Spice.

  1. Slice 1/4 inch thick rounds of day old baguette bread and bake at 350 degrees on a pan lightly coated with olive oil and a sprinkling of salt and bake until lightly browned Cool and top with a spinach leaf.
  2. Roasted Red Pepper and Cheese Tapenade: Blend 300 ml of crumbled feta cheese with 250 ml cream cheese, 250 ml plain yoghurt, 250 ml chopped roasted red peppers, 2 chopped green onions, 25 ml of hot curry powder, 10 ml of red hot pepper sauce, 15 ml of chopped garlic and 15 ml Northern Ice Vidal Icewine. Chill mixture before topping crostini.
Garlic Shrimp
  1. Boil shrimp just until they turn pink, rinse and chill. Melt equal amounts of butter and oil in a frying pan to make a marinade for shrimp. Add 25 ml of garlic, basil, dill and red chili peppers and stir until blended. Add shrimp to marinade and then place on top of the crostini with tapenade.

  2. Spray baking pan with vegetable spray
