Our favourite soups are hearty, spicy and use the best fresh vegetables we can find. Rich in phytonutrients and antioxidants -- and succulent enough to be called "butternut" -- this delicious gourd is the perfect addition to an autumn meal. Its buttery flavour is enhanced by Vidal Icewine's rich peach, apricot and green apple nuances. The easiest way to create a rich, roasted vegetable flavour is to cut the squash and onions in half and baste with butter in a 425 degree oven for 30 to 60 minutes.
